Aside from their aroma, perilla oil and sesame oil share many similarities,
leading many to confuse them.
This is understandable, as both oils are commonly used in
namul (seasoned vegetable dishes) and various dressings, and their colors are similar.


While there may not seem to be a significant difference in appearance and usage,
sesame oil is rich in omega-6 (linoleic acid), omega-9 (oleic acid), and lignans,
giving it excellent antioxidant properties.
Perilla oil, on the other hand, is rich in omega-3 (alpha-linolenic acid)
and has a lower lignan content, but it helps improve vascular and brain health.

Furthermore, because these two oils have different nutritional components, their storage methods must also differ.
Sesame oil can be stored at room temperature without major issues,
but perilla oil oxidizes quickly, so refrigeration is recommended.
If perilla oil is stored at room temperature like sesame oil, not only is its lignan content low,
but the alpha-linolenic acid in perilla oil easily oxidizes. Consuming rancid omega-3
increases active oxygen in the body, raising the risk of inflammation and cancer cell development.
